چکیده

Introduction: It is often difficult to ascertain how Salmonella issues in poultry begin and what measures should be implemented to prevent them. Chickens may become colonized through both vertical (from parent stock) and horizontal (environmental) means. This purpose of this article is to detail how Salmonella colonize poultry and to explain effective measures for preventing or controlling colonization.

Context dependency and consumer acceptance of risk reducing strategies – a choice experiment study on Salmonella risks in pork

The paper investigates to what extent context dependency is present, when consumers are introduced to different risk reducing technologies and how this will affect their preferences for reductions in food risks. In particular, choice experiments are used to elicit consumer preferences for reducing Salmonella risks in pork using farm level interventions vs. decontamination of meat at the abattoi...

Nutritional strategies to combat Salmonella in mono-gastric food animal production.

Nutritional strategies to minimize Salmonella in food animal production are one of the key components in producing safer food. The current European approach is to use a farm-to-fork strategy, where each sector must implement measures to minimize and reduce Salmonella contamination. In the pre-harvest phase, this means that all available tools need to be used such as implementation of biosecurit...

Salmonella serovars and their distribution in Nigerian commercial chicken layer farms

Commercial poultry farms (n° 523), located in all the six regions of Nigeria were sampled with a view to generate baseline information about the distribution of Salmonella serovars in this country. Five different matrices (litter, dust, faeces, feed and water) were collected from each visited farm. Salmonella was isolated from at least one of the five matrices in 228 farms, with a farm prevalen...

The influence of Salmonella in pigs pre-harvest on Salmonella human health costs and risk from pork

Salmonellosis in people is a costly disease, much of it occurring because of food associated exposure. We develop a farm-to-fork model which estimates the pork associated Salmonella risk and human health costs. This analysis focuses on the components of the pork production chain up to the point of producing a chilled pork carcass. Sensitivity and scenario analysis show that changes that occur i...

Evaluation of an enhanced cleaning and disinfection protocol in Salmonella contaminated pig holdings in the United Kingdom

Salmonella is the second most commonly reported zoonotic gastrointestinal pathogen in the European Union, and a significant proportion of the cases are linked to the consumption of contaminated pork. Reduction of Salmonella at the farm level helps to mininimise the contamination pressure at the slaughterhouse, and therefore the number of Salmonella bacteria entering the food chain. Cleaning and...
